I've found so far that you may have to wait up to 5 minutes to try reconnecting. The game renders a LOT of chunks around you at once, it just has it be in one of those. From what I understand, chunks are the height of the map, but only 16x16 in width. however some stuff in the game continues to be active up to 140 blocks of you, like mobs, for example. I was quite far from where my grass was growing downward (about 60-80 blocks) when it finally finished.
